I lost my phone but since I was near the end of my contract anyway, I ordered an upgrade on click and collect (I put my simcard into my friends phone to get the code I needed to do that)

I was just wondering if they text or email when it arrives instore? 'Cause if it's text I won't know 😞

You can go in the store you selected with your order and collection reference (its on your confirmation email) and wait for a while whilst they pick it from store stock (if in stock)
That's what it says in the email they send out once the order is confirmed anyway.

How was the OP able to put their sim in a friend's phone if the phone had been lost?

Possibly, but the OP never mentioned whether the lost phone was reported as lost, or if a block and then unblock had been put on their account. Confusing.
