I'll start off with a change from the usual burgers and sausages and introduce some tasty mains and sides, but of course the first step is to light your charcoal BBQ at least an hour before you want to start cooking.
Arrange the coals in a stack in the centre of the BBQ pit.
Place kindling around the base and a firelighter to get it started.
Once the coals have caught, you can spread them out and leave them to turn to ash - this is the time to start cooking.
I also like to add some mesquite wood chips for added flavour.
If you need to top up the coals, add them around the edge and allow them to burn down before introducing them to the main fire pit.
Perfect for cooking on:
Main dishes:
Prawn and Shrimp skewers.
Salmon marinated with chili and lime.
Cowboy Caviar, you must try this. Link to recipe on web https://www.easyanddelish.com/texas-caviar-recipe/
and finally a nice peachslaw....
Start with the usual coleslaw receipe and add bell peppers, fresh mint, chopped nuts and peach chunks
What are your favourite BBQ recipes?

I'd sorted the emoji's @TheresaV and was trying to do an image to show @MI5 However I can't upload pictures. I click on the camera, upload a pic from my gallery...it just won't post. Using Windows PC and Firefox. As I upload loads of pictures on PC this is really racking me off!!!

Bratwurst or even plain old hotdogs do a treat. A firepit and cooking over wood is a fave here, plus marshmallow snores afterwards (long forks for marshmallow toasting, and slap the marshmallow between the chocolate sides of two choc digestives once toasted... Mmmm.
Burgers just on in this photo, and marshmallows on telescopic forks. In our back garden not long ago.
Great post, @MI5.

I've found this thread fascinating. You have those people who have massive 'cook anything' barbeques, to normal ones...and then there are the ones my son uses. The small throwaway things which can be bought from any shop for about £3.00.
We don't use barbeques now but when we did it was similar in size to that of @pgn It took a lot of time preparing the other stuff such as potato salad, coleslaw, tomato salad, tuna rice with dips etc.
PS just copied a pic from @pgn' post to see if it would paste. It did...(First time you've seen a picture on any of my posts since forum format change. Deserves a minutes silence I think) 😂

I guess i'm a little disappointed to find out that the good old fashioned British bbq is a thing of the past. This new fangled way of sticking everything on there seems foreign to me! A great thread tho!
