I will be switching from A40 to A41 which phone does the sim stay in for the transfer? or does it matter..have seen conflicting info so want to be sure..

It doesn't matter at all. I transferred everything over from my Note 8 to my new Note 10 and the sim

was in the old phone.

You Then have two choices after transfer.

Use your old sim in your new phone but you would probably only get 4G (depending how old the sim is)
