I just got a new eSIM with you and have created a new o2 account however I am unable to login as the verification code has been sent to my temporary phone number. Would it be possible to use another phone number to resolve this issue

Strangely you need to be in MyO2 to give an alternative phone number to log into MyO2!
However, no other way until then but contacting O2
