I have had multiple emails and texts since last night saying I have changed my Tarrif to a new eSIM only however I haven’t made any of these changes.

This is not customer services, the best option is to call o2 on 0344 809 0202
I would also make sure any passwords are changed, as it sounds like someone has made access to your account.
