Could you tell me how to put a cap on the phone so bills don't escalate

You can't cap contracts with O2 I'm afraid.
If you are going over on calls you need to up your tariff - it's cheaper than paying for overs.

Oh and data just stops working so you can never overspend without actually buying more.

Or use your myo2 account to keep a check on your allowance

If you are getting near to your limit allowance I would advise you to check My O2 regularly. Out of allowance charges are quite expensive as you are aware. As said, consider a change of tariff to one with unlimited calls and texts. It may be cheaper in the long run than going over your minutes.
