How do I unlock a phone bought second hand, locked to O2 please. Previous owner has left their old sim in it.

I've just got my iPhone 3GS unlocked by O2 and their technical blurb states:
Once we’ve got your form, it’ll then take up to 10 days for us to get it unlocked for you. Once it’s unlocked, we’ll text you to let you know. You can then put a non-O2 Sim into the iPhone and connect it to iTunes. iTunes will then tell you the phone is unlocked.
Is the part where you connect the phone to iTunes a one-off requirement? i.e. You connect to iTunes once then you can use multiple pay as you go SIMS without having to reconnect to iTunes to validate each one?
I'm off on holiday soon and am planning to get a pay as you go SIM whilst abroad. I can get a UK pay as you go SIM before I leave and follow the above procedure connecting my phone to iTunes to complete the unlock process. But I want to check that when I get abroad, buy a new pay as you go SIM, I won't have to connect up to iTunes again?

I ended up speaking to an assistant on the web chat. For a one off payment of £15.00 she was able to unlock the phone within 24 hours which was fabulous. however I havn't yet plugged the phone into itunes so I am interested to see the answer to your question.
