I have an O2 business contract for the SIM in my unlocked iPhone 15 Pro Max. I am going to buy an Apple Watch Ultra 2 (cellular) which I would like to bolt onto to a new personal contract on the same phone using an eSIM. Can O2 do this?

Well, re O2 and Apple watches specifically, take a read here before you jump: Activate Apple Watch Guide
And it probably won't work with a business tariff from O2:

It should work if it is linked to you eSIM consumer tariff. However, this is O2 who have great difficulty linking the watch to a 'normal' phone as hundreds of posts on here testify

In theory yes, however, as O2 seem incapable of connecting watches not bought from them, I'd suggest you get your second contract from EE or Voda.
