Moving sim card to a new phone

I have recently move my simcard from a Samsung SM-G900F to a Samsung GT-19100P ( my wife's old phone which has not been used for approx a year). It is still showing my wifes designated email address and there appears no way of chaninging this, also the software does not appear to have been updated.

I can send/receive phone calls and texts although my wife's old texts are still showing.

Please advise how to move forward.

If you do a factory reset from Settings >Security it will wipe everything from the phone and allow you to enter your own gmail and other personal details.
