My Galaxy S10 has chewed throgh 5GB of data in 6 days when I hardly ever use it, mostly I am connected to wi-fi, any ideas why this might be happening ?

I can only guess that the wifi isn't working and the phone has reverted to mobile data.

If you turn off mobile data when connected to wifi, it will stop that from happening.
