I have recently traveled to Thailand and used an eSIM while there. This was switched off when I came back to the uk and everything was working fine. 

I am now in Spain and mobile data does not work so I deleted the Thai eSIM and reset the network settings on my phone. I have connected to the hotel wifi and everything works fine but am not able to access mobile data outside of WiFi.

You need to make sure in the settings on the phone, that the o2 sim has mobile data turned on, and that the apn is set to mobile.o2.co.uk (my Xperia 1V when switching esims doesnt always turn back on mobile data).

Cheers for that, mobile data was turned on but my APN settings had defaulted back to virgin media who I was with before O2. Changed it to 02 and all good. Many thanks 🙏🏽
