I have an Apple Watch Ultra with a sync-1 Airtime Plan. However, regullary the watch will fail to go to cellular when away from the watch. The only solution is to restart the Watch, then things work (mostly) for maybe a day or sometimes 3 or 4 days.
This can't be right surely, reading through the Community it seems a common problem. Has anyone had a fix that works? I'm going to ring O2 tomorrow for support, wish me luck!

Rang O2 support, they have 'reset' the eSIM for the Apple Watch and asked me to restart the Watch in a couple of hours and see how it goes. Hmmm not convinced but will try and see what happens.

It was promising for the first 24hrs, however I walked the Dog this evening and left my phone at home and surprise surprise no LTE connection. Had to restart the watch for it to come back.
May have to admit defeat and just cancel the Watch plan and save the £6.54 monthly fee O2 clearly have no answer and don't care about its customers.
