You'll need to call O2.

Advice from an O2 Guru regarding a way to get through:
When you call, you will be asked for the reason you are calling,
Stay silent for 15 seconds and you will be taken to the keypad options.
Press 2 for Everything Else
Press 5 for More Options
Press 7 for Anything Else which will put you though to an advisor.
Press Upgrade, Lost/Stolen or Fraud if you have to.
8am is the best time to call

There is nothing else you can do. Since Covid all goods coming from abroad are delayed. If you cancelled you may find the same problem elsewhere.
You could try Apple online. They do offer a credit agreements now https://support.apple.com/en-gb/contact
If you decide to go down that route you would need to ring O2 to cancel the order.

I know Apple are prioritising there own sales channels, and its that bad getting stock that :
Vodafone have stopped selling any iPad Pro's
EE are selling one variant of the iPad Pro - no delivery dates though
And looking at the Enterprise Channel, their are a grand total across all models of the iPad Pro with LTE is 30 devices 😞 ready to be shipped to retailers)
The only place i have seen and trust their stock levels is John Lewis.
Just to add we have been told by one OEM at work to expect delays of upto and beyond 13 weeks for all kit coming out of China and this is until at least April
