how do I change my e mail address, I can't find any information to tell me. My current one that you have has been removed

Log into your MyO2 and go the the section called "manage my details"
You need to change your username which is the same as your email address.

Hello @Anonymous how are you getting on with changing your email address in My O2? Did you manage to do it yet?

Should look like this in My O2 as per MI5 suggestion above (thanks @MI5!):
