You will get a new sim but dont have to use it .....As long as you are keeping the same phone...

If you want to use it and keep same number just do a sim swap http://swapmysim.o2.co.uk/

I am sticking with my current phone for now, but would I be able to use the new sim in a new phone?

The new sim will be blank so if you need a new sim you must do the sim swap.
Otherwise continue to use your current sim.

In response to your query about using sim in a new phone....It would totally depend on the sim size required for any new phone @Anonymous

You are doing the same as I did a couple of years back. Best thing I ever did. Of course there's special offers on Simo contracts now till Feb 1st @Anonymous. My £18.00 a month is £9.00 a month for 6 months...Smiley Very Happy
