Keeping my phone choices.

Ok, so at the end of my contract, if I am happy with the phone I have, can I choose to just stick with the phone I've got, but instead just upgrade my actual contract? For example, I could go from 1Gb to 2Gb of data?

You can change your tariff and keep your phone. Think about a 4G tariff where you get extra data allowance before the end of October. Also look at the Simplicity tariffs.

Your present contract will just roll on to a 30 day contract if you choose to do nothing.

You can switch to any of the Simplicity tariffs here https://www.o2.co.uk/shop/simplicity/

or PAYG here https://www.o2.co.uk/freesim/
