I'm struggling finding a bolt on that consists of unlimited texts and unlimited data, can anybody help please?

O2 don't supply unlimited data I'm afraid.

If your ok with locking yourself into a 12 month commitment ,and can pass a Credit Check.

The OP didn't specify contract or PAYG as a condition so I was answering the question as to the most data that is available with unlimited texts. You also get unlimited mins on this tariff - Just an alternative option to consider!
