I have the O2 travel inclusive zone bolt on but am not able to phone UK from Australia. Don’t understand what is going on. Have always been able to call previously.

Use the search function for Australia and you'll find loads of posts with suggestions to fix.
Make sure you have 4g calling enabled and turn off wifi seems to work best but do search the posts for speed.

I have a similar sort of issue phoning an Australian number while in Australia but I have a zone 1 including Australia included in my package. Still cannot make calls. Yet my husband on iphone can make calls on exactly the same O2 package. Im on samsung s25 ultra. I'm wondering if because i had flight mode on during the flight when i turned it back off maybe something else is still off or maybe i need to turn off wifi calling so I just have 4g or 5g calling. Also noticed i cannot get 3g while the iphone allows 3g and he can make calls?!?!? O2 are useless getting a response for this. There is no livechat personal support to help. May try going into a UK O2 store to sort this b4 next trip!

Sounds like you and your partner may be on different networks. Try searching and selecting another.
If you have not got 4G Calling (VoLTE) switched on then you won't be able to make calls.
90% of roaming problems are down to either phone settings or the roaming network
