How long, on average does it take to unlock an iPhone for use with a different carrier?

It can be between 24-48hrs....(though some have experienced shorter and longer waiting times)

They quote 72 hours but usually it's quicker than that.

Thanks - I noticed after I had filled in the form that it said that I would receive a text or email within 28 days to say it had been unlocked!!!!  This was after I was told within 72 hours by the online chat gurus.

Online chat are correct in this case for an iPhone.
Just put your new sim in once you receive the email to say it's unlocked.

Yes we had someone else today saying they had the same response, though honestly it doesn't take that long....Thats just a standard response.
