I think it's a Christian tradition that goes way back in history. Fish on Fridays has always been the family dish as long as I can remember and when we owned a chippy we always sold more fish on a Friday teatime than any other sessions.

Tradition at our hospital as well. ..Though there is always a choice of other dishes on the menu. I might add....not bad all all for hospital food which gets a very bad rep normally

Apparently it's a Catholic tradition whereas no red meat was eaten on a Friday to symbolise the crucifixion of our Lord and the reason McDonald's invented the filet of fish.... who knew?
