you cannot update via iTunes in the normal method, you would have to use WinPWN or something similar to update/jailbreak/unlock when each new s/w version comes out!
the warranty is effected as long as your device is jailbroken, but do a simple restore in iTunes and this reflash the handset and erase all previous jailbreak/unlocked/adapted s/w's and restore it to the factory basics
