I'm about to upgrade from an iphone 5s to an iphone11 pro. What should I do with my current phone to prepare for this and how does the switch work in order to save contacts, photos, emails, apps, etc?

You need to back up your old phone to iCloud or iTunes then sign out of iCloud and fully reset the phone.

Set up the new phone from the backup.
