I have iCloud enabled, so I understand that emails, pictures etc will migrate that way, but it's the apps I'm not so sure about.

Yes, do as above. All my apps have moved across and reinstate in the same place as you had them on your old phone. Books, music and film didn't reappear but I wanted to start afresh with those anyway (I tend to use my iPod Touch and iPad for reading and viewing films.)
