I assume you've turned on the Bluetooth settings in the iPhone.
The B icon should show in the iPhones status bar.
Settings , Bluetooth
And the instructions that came with the headset advised of the pairing code to use. Sometimes pairing can be a bit of an art form and can take a few tries to perfect the pairing.
I would try resetting the iPhone via Holding the Top Button and Home Button until the Apple Logo appears, and then let go of both. Your iPhone will reset.
And ;
Settings , General , Reset , Reset All Settings.
Have you ever paired up with another device using your iPhone. I'm ascertaining whether the Bluetooth is working as it should.
Do you have another phone with Bluetooth to see if it will pair with the headset ok.
I see from Google that the iPhone is noted as a device that will pair.

first turn the Device ON and make sure it's ON searching for the Iphone to pair with.
secondly IPhone >> Go into settings >> bluetooth
and search for your device (uniden)
press on the device to pair with and enter the pass code if you were asked to do so
wait few seconds till the devices negotiate and setup the session and thats it Your Done !"
"yeah hedenram is right. my problem was that i was trying to pair something WITHOUT the headset in pairing mode. just switching it on doesnt put the headset in pairing mode and it will reject the 0000 passkey even if this is correct. it is vital when you turn on you hold the power button til it flashes red/green and then it will be in pairing mode and accept the 0000. the only way i found this was in the instruction booklet which i thought i had chucked away

Suggestion Source: Pin number for philips SHB6100 aside from 0000.

Into an Apple store and speak to a specialist.
Those guys love a challenge.
I'm wondering if their is indeed a compatibility issue after all If they cannot help.
