I can’t see anywhere to just keep the sim only plan i am on and just buy device only

It can't be done
You need a new tariff with a new phone
Only way is to source the phone from somewhere else

I wonder what sort of a deal you will get from Apple itself or from Western Computers - approved Apple reseller - over the weekend of Black Friday ?
A friend got an iPhone 14 over last year's BF weekend and got a gift voucher for £150 or thereabouts, which he promptly spent on accessories.
