If I get a pay monthly Apple Watch with 4G from EE will I be able to use it with my phone that is linked with O2? Or will the watch be linked to an EE number when I don’t have my phone with me?

No it will be linked to EE

I have no affiliation whatsoever with O2 or any subsidiary companies. Comments posted are entirely of my own opinion. This is not Customer Service so we are unable to help with account specific issues.

You will be able to remove the link to the EE account on the watch phone app, however you will still be paying EE for the contract for the watch (both for the device and an plans), you will then be able to connect in the watch app to O2 (assuming your phone is with O2) however you will also then be charged from O2 for the airtime once the free period is up

Thanks for the reply. Can I just ask what do you mean by the free period? And once I connected in the watch app to O2 will I receive text and calls to the watch even if I haven’t got the phone?

I don't know if EE force you to take a watch plan (I suspect they do) in which case you would be linked to EE until that period ended or you cancelled it (check costs).
It would be much easier for you to get the watch from O2.
