I can make and receive calls and sms but having trouble setting up e-mail.

I would guess you need the correct apn settings for your data connection.
These are for Android, so you may have to pick and choose the ones asked for on your phone.

I've set up the Wi-Fi and wap connections so I can access the internet, but when I try and set up e-mails I get the following error message:
Setting wizard:
Server not found
Any pointers to how I find the necessary server or how to set up the server. I'm using O2 Pay monthly.

For gmail there is an app http://www.symbian-freeware.com/download-gmail-app.html
gmx needs these settings:
- Incoming (IMAP) server: imap.gmx.com
- Port (Incoming server): 993
- Incoming server requires SSL: Yes (check box)
- Outgoing (SMTP) server:mail.gmx.com
- Port (outgoing server): 587
- Outgoing Server requires SSL: No (uncheck)
mail.com needs these:
