Hi, I’m wanting to switch my old phone number onto this new sim. I have my pac code I just don’t know how to switch

You need to do a sim swap. All instructions here Guide: Sim Swap: a mini guide 2017 update 

However, if your PAC is to move to O2 you need to give them the PAC and they will migrate the number to your new sim. Guide: Migration & porting into O2

@Shann968 As well as the good advice from @Cleoriff bear in mind that O2 doesn't port numbers on the weekend, so the earliest day of your old number becoming active again would be Tuesday, or most likely a few days after that.
