I have moved to Thailand and will be using a Sim card for Phone and data. However, I need to keep my phone number because it can’t be transferred to Thailand. Is there a basic contract I can have to cover the use of the phone which will be very minimal.

@Neilcad You cannot take out a contract to solely use abroad. Your best option would be to swap to a Pay & Go sim, but as you've already left the country that will be difficult, as O2 will only send a sim to a UK registered address. You can try to contact O2 via social media to see if they can help, but your chances of being able to do what you want are slim, if not impossible. @Neilcad If you're able to still keep your contract going, although I don't think that's what you want to do, see this: How can I pay my bill?
I'm not 100% certain, and if I am I'm sure I will be corrected, but I think any payments would need to be made from a UK based account.
