I've just upgraded my SIM only plan online and the new tariff allowances are already showing on the MyO2 Account page. I've been sent a new SIM which I'm expecting in a day or 2 but my question is - do I need to install this new SIM when I get it, or can I just keep the old SIM as I'm not changing the phone and everything seems to be working fine with MyO2 showing my new contract/tariff details?

Just continue with current sim and keep new one as a spare, unless your old sim is not 5g compatible.
If you want to switch to a 5g sim, just do a sim swap Guide: Sim Swap: a mini guide 2017 update
