You just sign into myo2 and then go to the shop and buy a new sim card contract, pass the credit and affordability check and then off you go...
If you have any issues then either pop into an o2 store or call the sales team on 0800 081 0255

You need to register it with a different email address and a seperate My O2
As it's a data sim you need to put it in a phone just to receive the registration text
