Can I just setup a new DD and cancel my old one as I've changed banks?

Setting up the new DD and making a manual payment for this month's bill allows for a new DD to be setup.

This is something you should be able to do in My O2 in your account sections.
May say Manage Cards but it can be done from there

The only viable option I see is Payment Options but I'm unable to change the current DD because it will be collected on the 22nd. But that will be the case for the next 2 years...
