Apple Watch Series 8 & iPhone 14 pro - Data plan stuck on 'Activating'

Hi All,
I purchased an Apple Watch 8 directly from Apple. The pairing process with my phone worked fine until I tried to add a mobile data plan.
Since it has been stuck on please allow 24 hours for activation...reference code 08 for the past 3 days. I have reset/unpair etc many times, doesn’t change anything, just back to the same error message.
I have called O2 (on 202 number) ... the last time I was told that didn't know why this was happening and would pass it the query onto the technical team but this could take 72 hours.
Can anyone help me with this?

I have the same issue, I got code 14,15 and then 91. Countless calls to o2. It’s stopped giving the codes and now stuck on activating for days. Cracking up with it.
