I cannot seem to be able to use my Canadian credit card as the billing address is obviously not in the UK. Any ideas?

Strange one, what options have you tried?
There are a few.

If you get no joy with those then I can only suggest you contact o2 directly.
Are you in Canada at the moment?
Another option maybe to get a local PAYG sim card which I would have though would be a cheaper option for you anyway.
