I purchased an Apple Watch and need to speak to someone to claim the upfront deposit back but every time I phone o2 there isn’t an option for this and the automated system cuts me off. Who do I call?

Just press any option to get through. You get your deposit back after 3 months of on time payments. It will be credited to your 4th bill. If you want it in your bank, you have to tell them this.
