I keep getting charged for iTunes I haven’t purchased and can never speak to anyone at O2 . Very frustrating!

You need to speak to Apple as well, you can check what purchases are been made by using the Itunes App, or speaking to Apple direct via apple.com/support
If it is an extra, then as PGN has suggested speak to o2...
