My son went from 16gb of data to 200mb overnight! Could someone please explain how this could be possible. He did nothing more than usual

It sounds like the phone lost WiFi connection during the night, and updated the Operating system / Apps.

Check the settings on the phone under data usage to see which apps used the data.
