Is it possible to get a letter from O2 that proves that O2 is my provider ?

Then you need to fill in the Subject Access form, pay £10 and wait up to 6 weeks. Even then it may only be your mobile number without your address unless you are contract.

It's always been my understanding that if you need to provide proof of address to some one or some company that mobile phone bills are not considered as valid proof.

I DO NOT WORK FOR O2

It is for the address and they told me such a letter would be proof enough. But now that you mention it, it might be wrong.
