im going to france and im going to take my iphone. I want to be able to use wifi (when connected to somewhere) games, music etc (basic things).
I don't want to use calls, texts or emails, as I know they will make my bill go up and I don't want that to happen.
What do I have to turn off to enable this to happen?

Also take into account that any smartphone is a temptation for muggers and pick pockets so ensure you perform a back up to iCloud and iTunes before you go just in case you have to download your contacts to a replacement while abroad and also ensure any insurance cover you have have covers you for loss / theft whilst abroad.
Check the t&c for exclusions.
