Hi does anyone know if I buy an Apple Watch from say Curry’s, Argos or Apple Store. As long as I buy gps/cellular watch can I pair/add this to my iPhone 15 O2 sim monthly plan by just pairing the watch?

In theory yes but many have issues with watches not purchased from O2.

You will also need to buy the airtime contract for the watch.

I can testify to this, bought from apple. Had lots of issues trying to connect with o2. Hours of time with o2 support later and still not resolved. I would stay away
