18 days!!!!! Been trying to get a data plan activated on my Apple Watch, stuck in the system. Customer services have been appalling and the scripted response please wait 48 hours. Apple Watch purchased from apple store so they won't help attach it to my account. Cannot get eSim removed to put a new one on.

It just needs the esim resetting.
You will have to persevere with customer services unfortunately.
