Contacts should be backed up to google and will sync when you sign in with your google account automatically. For call logs, texts, whatsapp messages you need this app https://play.google.com/store/apps/details?id=com.zegoggles.smssync&hl=en.
Apps will be in your app section but you will need to download them from Play as the S5 will need a different version to your S2 https://play.google.com/apps?hl=en.
Sync your pictures & videos with G+ https://plus.google.com/u/0/up/search .......

Now I've lost all my numbers just got email addresses! This is a nightmare. I thought with new technology and better phones this would be a piece of cake. Not everyone is techno wizard after all!

You can't lose numbers - What did you do exactly?
Contacts are all backed up here https://mail.google.com/mail/u/0/?tab=wm#contacts or will be still on your old sim if not sync'd to Google...

It's the same on Android but you have to sync it to the cloud first.....

Select back up in your s2 settings and back everything up to Google. (Do not factory data reset yet if at all).

Then put your sim in your S5 and enter in your Google id. Everything should sync although it make take a few minutes. Recommend you use wifi.

Please let us know how you get on
