I've just upgraded my iPhone but to a Samsung. I have an Apple Watch also on pay monthly with o2. I obviously can't use my Apple Watch with the Samsung but is it possible to recycle the Apple Watch or cancel the contract and hand the watch back.

Sell it to CEX and pay it off.

You'll get more for it than O2 recycle and less gassle.
