I have used O2 for decades, always on a Pay as you Go tariff. One of my 3 phones is, for some unknown reason, a Big Bundle tariff at £5 monthly and I can't find a way to change it. If I try and change the traiff, I am only offered Bundles which I don't want. Even if the phone is not used at all, the balance goes down to zero and it demands money. This particular phone is only used as a back-up for emergencies. Any ideas, please?

O2 no longer do Classic PAYG. They only offer bundles.

If you want a classic PAYG tariff then try Tesco or giffgaff. They have what you want and both run on the O2 network.
