Your wife will need to sign up for a contract in her own name, and pass all the credit and affordability checks, and then you will need to pay off any device plans etc on the old account, and then you can request the number to be migrated Guide: Migration & porting into O2
Just be aware o2 can be awkward with number migrations so you may need to port out for around 30days then port back in
Other than that just change the bank details to your wifes bank details...
