Log out and it will ask if you want to remove all data or keep it.

Follow the advice re link from apple iCloud just needs to forget the current iphone then you sign back in with the new handset this ensures that nobody can access your data for the old handset http://www.o2.co.uk/help/phones-sims-and-devices/returning-your-ios7-device
