Maybe a strange question but does anyone know why eSIMs always end up on slot 2 even when there are no other SIMs around and the only data connection is WiFi?

Because most manufacturers reserve slot 1 for a physical SIM. 

This will change when we move to phones with no physical SIM slot.

This is not O2 and we are all customers here similar to yourself and cannot answer account type queries.
