Hello and happy first day of November,
Today is officially recognized as World Vegan Day which was first celebrated in England in 1994.
More and more we're seeing vegan products pop up in shops and clothing stores in an effort to reduce the use of animal products and impact on the environment. I'm always amazed to see all the things they can make plant-based!
Recently I've had to expand my cooking knowledge and prepare some food for my vegan friends. I've had an awesome time testing new recipes--but I think desserts are my favourite. I've gotten a lot of inspiration from these recipes on BBC Good Food.
Whether you're a practicing vegan or just someone who wants to eat more veg, there's no better day to try a new recipe.
Here's a photo of a vegan apple thyme cake I made which was inspired by a mash up of this vegan ginger loaf cake recipe and the looks of this cake:
Ta da!
I always enjoy a good theme for cooking something new. My husband thinks it's his job to be suspicious of anything vegan but the gamble usually pays off.
If you're not up for cooking and you'll be out and about at the weekend, don't forget to check your O2 Priority app to grab a free Vegan Sausage Roll (or just a regular one). I always forget mine 😅
I'm going to have to set myself a reminder because Priority has partnered with Greggs to donate £1 to the Greggs Foundation for each one redeemed, so it's for a great cause!
Do you think you'll try any new vegan recipes this week?
