Happy Mushroom Day! Care to share your recipe?

I kid you not! Today is national mushroom day! And to celebrate such important ephemeride in our calendars I wanted  to ask you if you have a favourite recipe that involves the exclusive use of these delicious fungi. What is your personal favourite. A soup, a stew. None? Ah!

 

Personally I love a Spanish variety of mushroom that is called Saffron milk cap and it's delicious with roasted garlic and parsley or on a bbq grill.

I love making a kind of mushroom rarebit.

 

Mix an egg, grated cheese, 2 tsp mustard seeds together into a paste then pour into a big "breakfast" mushroom with the stalk removed. Grill for about 15 mins till the top goes brown.

 

Yummy!

On the rare occasions I actually cook for myself I always add mushrooms. No recipes as I'm no chef. Cheese and mushroom omelette does it for me but any fool can make that....

Thai cooking and eating out I always go with a mushroom option

Adding mushrooms is a tricky thing when cooking for my family. Some love them... others hate them.

I do a reasonably good braising steak recipe (loved by all of them) but when serving up... I have to remove all evidence of mushrooms from two of the plates.

Mind you that recipe also involves adding another ingredient which I keep secret...as everyone hates it....or so they say...Happy Dance

Nothing inventive....a simple kidney......Something my Mum always put in her braising steak recipes. Adds so much to the flavour but my family barf at the thought of it. However I do smile when they say 'why doesn't my braising steak taste as good as yours?'
