My voicemail turns on after 2 rings but not from all callers, I keep missing calls because I can't answer quick enough.

Its based on time and not ring to extend this go to your dialpad and type:

*61*901*11*30#

This will extend the duration to 30 seconds.
- Xperia 1V - o2 and Spusu
- Pixel 8 Pro - o2 and Vodafone UK
